Abstract
Starches extracted from three species of Dioscores, namely, Dalata, Desculentum and Dhispida were characterized. The physicochemical properties such as amylose content, granule shape, size and size distribution, intrinsic viscosity, gelatinization temperature, granule swelling and solubility were found to differ significantly with species. A significant positive correlation was observed between amylose and mean particle size, amylase and average gelatinization temperature and mean particle size and average gelatinization temperature.
