The effect of different conditions on the !storage of pill nut oil was studied for fourteen weeks. Two storage treatments were done namely : the control ( stored in an atmosphere or nitrogen ) and the air-expound ( ii loved in atmosphere of air ). The samples were stored under two temperatures, at room temperature ( 28°C - 30°C ) and in refrigerator ( 5°C ). Pre° fatty acid number and peroxide value determinations were done every two weeks while iodine number and saponification number were determined every month. Analysis was more frequent when evidence of deterioration was observed. Experimental results showed that exposure to air hastens the development of oxidative rancidity. Oxidative rancidity is further enhanced by high temperature. Highest amount of peroxide was exhibited by oil samples exposed to air and stored at room temperature and the lowest, by the control stored at 5°C. On the other hand, exposure to air was found. to have no significant effect on free fatty acid formation.
