Abstract

The practicum was conducted at the Research and Development Department of Fresh N' Famous Foods Inc.- Greenwich located at Shaw Blvd., San Antonio Village, Pasig City, Metro Manila from April to June 2013. Greenwich is the largest pizza and pasta chain in the Philippines serving a variety of food combinations like pizzas, pastas, chicken, rice dishes, combo meals, sidekicks and desserts. Throughout the practicum, the student was able to learn the different processes and works in each of the sections of the R&D Department namely: Technology and Innovation, Technical Support and Commercialization and Store Processes where she was able to apply the principles and concepts learned from the university to the food industry. The student also performed different physico-chemical analyses, sensory tests, experiments and product development during the course of the practicum. Visits to food plants were also experienced by the student. Problems encountered and recommendations to further improve the program were also mentioned. Aside from the technical aspects of the practicum, proper work attitudes and camaraderie among employees were also learned. In general, the student has improved her intrapersonal skills, time management skills and self- confidence.
