Abstract

Franklin Baker Company of the Philippines is one the major manufacturers of desiccated coconut, specialty coconut and coconut water concentrate. It produces wide variety of cuts and forms of desiccated coconut that can be used in culinary and confectionary creations. The company holds many certifications that guarantee consumer's safety. The practicum was conducted at the Analytical Laboratory of Franklin Baker Company of the Philippines, San Pablo City, Laguna from April 15 - May 10, 2013. The student was able to perform different chemical analysis such as sulphite determination, oil/fatty acid content determination, pH determination, moisture content determination and titratable acidity. In addition, the student was able to learn and observe the roles of analysts while performing various analytical tests. The use of different instruments, such as zeroing buret, pH meter, Monnier-Williams set-up and thermoreactor were also learned. Different tests on desiccated coconuts were also learned to ensure the production of high quality products. The student was also exposed to the analysis of waste water, such as determination of total settleable solids, dissolved solids and chemical oxygen demand that control the emitted waste water in the production area. Overall, the student gained additional knowledge and skills which will be relevant when the student works in the industry. The student also learned how to troubleshoot problems with regards to processing and also how to deal with her co-workers.
