Abstract

The plant practice was conducted at the Dairy Training and Research Institute (DTRI), Animal and Dairy Sciences Cluster (ADSC), University of the Philippines Los Baños (UPLB) from May 6 to May 28, 2011 covering a period of 150 hours. From the university dairy farm, the Dairy Products and Technology Development Division (DPTDD) which is under the DTRI is responsible for the processing of milk into a variety of dairy products such as fresh milk, chocolate milk, yoghurt, and white cheese. In the course of the plant practice, the student was able to apply the theories and principles learned in the university to actual food processing plant. The student gained hands-on experience and additional knowledge on the different operations in the dairy plant and was able to participate in the different dairy plant activities such as milk reception and sampling, processing of milk products, quality control testing, storage and packaging as well as plant cleaning and sanitation. Problems that were encountered during the plant practice were identified and recommendations were formulated so as to further improve the plant.
