Abstract

Cariño and Sons Agri-Development Incorporated (CASADI) is performing its mission to provide their customers with the safest and highest quality of chicken products through honest to goodness and uncompromising personalized services. San Miguel Foods Incorporated has contracted CASADI to process their chickens and supply them to several food chains such as Mang Inasal, Baliwag, McDo and KFC as well as to several chicken retailers such as Magnolia Chickens, SM Supermarket and Robinson?s Supermarket. The practicum was conducted at the Basic Operations Processing Plant of CASADI, Barangay Aya, San Jose, Batangas. The training covers 150 hours from May 6 to June 4, 2014. The activities carried out were assisting in the preparation of KFC?s auditing, reviewing the company?s manuals, familiarization of the processes in the basic and further processing operations plant and quality analysis and validation of Mang Inasal and Baliwag lechon manok. The said activities allowed the trainee to apply theoretical knowledge learned from the University, to acquire understanding of the poultry processing industry, to develop work ethics and proper decorum towards the employees, superior or not, and most importantly, to have a clearer view of the field she has chosen giving her an edge as a food technologist.
