Abstract

Food science and technology practicum (FST 198) was done at the Dairy Products and Technology Development Division plant, College of Agriculture, University of the Philippines, Los Baños on May 20214 for a period of 150 hours. The student became familiar with the plant layout and equipment. Laboratory test to determine the quality of the raw and processed milk like Clot-on-Boiling test, lactic acid test, and specific gravity test were also done.CIP protocol and analysis of solutions for disinfection were prepared. Hypochlorite and alkaline solutions were analyzed by the student if it passed the required levels.Based on the results of the srudy, the DTRI dairy processing plant passed the standards for CIP sanitation. The students also became familiar with the production of fresh milk, chocomilk, cheese, and yogurt. At the end of the practicum, a comprehensive report about the activities done was submitted.
