Abstract

The major plant practice was conducted at the Batangas Agribusiness Center, Bolbok, Lipa City, Batangas during the summer of academic year 2010-2011, from May 2 until May 29, 2011. At the first week, she was first assigned to observe and partake in the processing of dairy products in the plant. During the month of May, when the practicum has done, the plant was receiving around 6,479 liters of milk daily. Aside from participating in the processing of dairy products, the student’s activities were focused on quality control work wherein she performed different milk quality tests such as clot-on- boiling test, foamability test, titratable acidity test, microbiological tests, and other chemical analyses using the Milko Sonic milk analyzer. As she performs those activities, she gained tips and advices from the co-workers and applied it together with the knowledge she acquired inside the classroom. At the end of the major practice, the student evaluated the plant and the various activities she performed. She presented the strengths, weaknesses, opportunities, and threats (SWOT) analysis, the problems encountered, solutions to the problems, recommendations, and the lessons learned.
