Abstract

The practicum was conducted at Universal Robina Corporation-Cereal Plant located in Bagong Ilog, Pasig City from June 17 to July 11, 2015 for a total of 150 h. Getting acquainted with the proper techniques and improving laboratory skills were the primary motivation of this practicum. The trainee was under the Quality Assurance Division of the company and was trained to perform physicochemical analyses of raw materials used for the manufacture of Great Taste White 3-in-1 Coffee and Great Taste Original 3-in-1 Coffee. Such analyses include bulk density determination, water activity determination, moisture content determination, pH analysis and wettability test. The trainee was also trained to receive raw materials delivered to the plant as well as to conduct sensory analysis. Throughout the on-the-job training, the trainee was able to gain appreciation on how the food industry works and he was able to develop his skills in the laboratory.
