Abstract

The major plant practice is conducted at Mother Earth Products, Inc., Mabalacat, Pampanga from April 19,1999 to May 21, 1999. The purpose of this of this plant practice is to gain working experience and new insights in technical operation and management of commercial meat plant and to provide analysis regarding this.

The specific objectives of the study are: 1) to participate and provide analysis in the actual operations of the different sections of a commercial plant; 2) to apply knowledge about processing and principles in meat preservation; 3) to determine the different management techniques and strategies carried out in a commercial plant; 4) to familiarize with innovations and technologies used in the meat industry, and 5) to analyze problems encountered in the plant and provide/formulate appropriate strategies and recommendations regarding these.

The plant practice was conducted for six weeks were the students participate and make observations in the actual operation and management of the commercial plant. The activities undertaken were analyzed to produce a comprehensive report of the company, technical procedure, problems encountered, lessons learned and recommendations.

Based on the plant practice, I was able to participate and analyze situations in meat company and put the principles I have learned in class into practice.
